Rice Evalution





The degree of rice freshness was evaluated as the first example of the application. Three grains of rice taken at different harvest times were placed on the agar film formed on the sensor. pH values of a 7 mm by 17 mm region under the pieces of rice were obtained at 100µm intervals after 5 minutes. The resulting pH values are depicted so that the neutral pH region is blue and the acidic region is red. We confirmed that the pH of the lower pH region corresponded to the harvest time of the rice. The surface of rice is known to become acidified as it grows older. Therefore, this pH image can be said to visualize the freshness of the grains of rice. Evaluation of rice grain is typical Japanese or Asian idea, however, this example can thought to be applied to evaluation of various grains such as wheat. This result indicates that food science study is one of the possible applications of this example.
